By soaking the nuts and seeds in a solution of Celtic salt  and water for at least 12 hours this helps to neutralize the phytic acid and enzyme inhibitors thus making the nuts and seeds more digestible. Pre-soaking (sprouting) also creates a host of nutritional benefits including: increased bioavailability of protein, increased bioavailability of minerals, and more activated enzymes!

Nate makes every single one of his products by handed and only uses certified organic, raw, unpasteurized, non-genetically modified, gluten-free ingredients.  It’s just good ol’ nuts, seeds, and spices.  HOW DO I PREPARE IT?

 

Not only is the quality of food important, but so is how it is prepared. That's why pre-soaking, sprouting, and low-temperature drying are the norm at Nate's Raw Harvest. 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

Step 1: Raw Harvest

The first and most important step in making my products is selecting the ingredients.  I make sure to find only the highest quality food ingredients and that means certified organic, non-GMO, gluten-free, raw nuts, seeds, and spices.

All food ingredients are kept either vacuum sealed, refrigerated, or both until time of production and are usually made within two weeks of delivery.   After anything is sprouted it is either packaged within 24 hours to reduce oxygen exposure and loss of nutrition or sealed and refrigerated.  This preserves the maximum amount of enzymatic activity, nutritional content, and freshness.

 

 

 

 

 

 

 

Step 2: Pre-Soaking

In nature, phytic acid and enzyme inhibitors that are naturally present on nuts and seeds prevent them from sprouting if the environmental conditions are not ideal. After enough rain and moisture are present, the phytic acid and enzyme inhibitors are neutralized thus allowing the sprout to form and grow. Since humans cannot digest phytates and enzyme inhibitors they will disrupt digestion and block us from absorbing vital minerals such as phosphorous, calcium, magnesium, iron, zinc, and selenium. This may lead to possible mineral deficiencies and contribute to many health problems.

At Nate's Raw Harvest, I follow in Nature's footsteps. All food ingredients are soaked in filtered water and Celtic sea salt to begin the neutralization of phytic acid and enzyme inhibitors.  The water neutralizes the phytic acid while the Celtic salt neutralizes the enzyme inhibitors and creates a slightly alkaline pH in the nuts as well as providing extra trace minerals. Depending on the specific nut or seed, the soaking process can take anywhere from 6 to 14 hours.

 

Step 3: Drying

Once the pre-soaking is complete the nuts and seeds are rinsed off and it's time to dry! While roasting may save time, it also destroys many of the delicate enzymes and nutrients. Following nature's example, anything drying out in the sun is rarely higher than 105-118 degrees Fahrenheit. We try to mimic nature the same way. This allows a light, crisp texture that tastes amazing while keeping the food raw and preserving the life-giving enzymes. The drying process takes at least 72 hours.

 

 

 

 

Step 4: Great Snacks!

Now it's time to eat! With so many choices and uses it can be hard to know what to pick. I've made it easy for you with the listed health benefits of each food and ways you can use them. Nate's Raw Harvest products are snacks and food ingredients. You can eat them right out of the bag, mix them with other foods, or add them in a recipe or dessert. They will stay fresh if kept in a sealed container for up to 4 months room-temperature, but are best kept refrigerated for maximum freshness up to 12 months.
